Reminiscent of an elegant drawing room in a luxurious residence, Stillery is a 1940s-inspired, sophisticated cocktail lounge set in the heart of the exclusive Double Bay village.

With a distinct focus on gin, this world-class establishment showcases an impressive collection over 100 limited-edition and vintage varieties from both Australia and abroad, all set behind a seven-metre long marble and leather-clad bar. From this collection, Stillery’s talented mixologists have crafted a unique selection of G&Ts and gin cocktails by hand-picking an array of unique botanicals to perfectly pair with a selection of the most sought-after pours.

Offering personalised table service and a demure ambience, the lounge caters to all other tastes and preferences, with a premium assortment of champagnes, wines and boutique beers and ciders on offer.

Executive Chef Alex Vilches and his team have also created a superb bar menu of shared plates, charcuterie and indulgent sweets designed to further elevate the Stillery drinking experience.

On the first floor of Sydney’s luxury bayside retreat, InterContinental Sydney Double Bay, Stillery is open seven days a week from 11.00am.
