Why 48h?
If you want to eat a real pizza, make sure the dough has been leavened for
48 hours!
For us, 48 hours is the minimum time required for the dough to rise.
A dough that has been leavened for 48h with natural yeast will make your pizza light, fragrant and aromatic…just like in Italy.
Natural yeast has been used for generations in Italy. In fact, back in the day, only one person in the village would have natural yeast and they would use it to barter goods with.
Bread was made once a week, and in some villages, just once a month,
so natural yeast had to be bartered or families would go without their bread….
a sacrilegious thought to any food-respecting Italian!
At 48h, we want to respect and maintain these traditions and introduce you to true Italian flavours, remastered for today’s refined palates. Buon Appetito!

My friend was so excited to take me to one of her favorite pizza places. Unfortunately, we waited quite a while to be attended to. When the waiter finally came I’m sorry, I know it’s Karenish, but we really felt ignored, he acted as if we were a bother to him. The food was okay, but the toppings on the pizza were not spread well, and I was not impressed. As a hospo worker myself, I understand there are some things that can’t be helped, but I didn’t feel welcomed.
When the expectations are too high, it’s highly likely that they cannot be met.nnGreat pizza hope the warmth can last longer, great gnocchi hope it can get a bit saltier, great merlot, but I am not sure it qualifies a Asia Pacific Top 5 or not, I am sorry.nnThe staff can be more friendly as well I think.
This place is on several top pizza places, including top 50 in the world and top 5 in Asia-pacific. And it lived up to the hype. The parma pizza was absolutely fabulous, with a ton of prosciutto to add on to your liking. The sauce and cheese were perfect, and the crust was delicious, and not crunchy but sturdy and didn’t flop in the middle. The lobster ravioli was good too. The pizza was very reasonable and the ravioli a bit expensive, but totally worth it. It’s got a cool vibe and the staff was friendly. A must when you’re in Melbourne.
The signature Parma ham pizza was good value and nice presentation but the pizza base wasn’t very tasty and a bit burnt. Didn’t like their gnocchi. The restaurant was quite small so sitting wasn’t really comfy. I think the restaurant is a bit overrated.
Incredible! One of the best Italian restaurants we’ve been to. The food was full of flavour. The atmosphere was cozy and service was top notch. A firm favourite for sure.
