Why 48h?
If you want to eat a real pizza, make sure the dough has been leavened for
48 hours!
For us, 48 hours is the minimum time required for the dough to rise.
A dough that has been leavened for 48h with natural yeast will make your pizza light, fragrant and aromatic…just like in Italy.
Natural yeast has been used for generations in Italy. In fact, back in the day, only one person in the village would have natural yeast and they would use it to barter goods with.
Bread was made once a week, and in some villages, just once a month,
so natural yeast had to be bartered or families would go without their bread….
a sacrilegious thought to any food-respecting Italian!
At 48h, we want to respect and maintain these traditions and introduce you to true Italian flavours, remastered for today’s refined palates. Buon Appetito!

Had a good time here! Really love the pizza. We ordered the Di Parma and 48h seafood pizza. Personally like the Di Parma more but the 48h is still nice. The tiramisu is moist and delicious. The staff were welcoming and friendly, frequently checking whether we needed to order or whether the food was ok. Recommend!
very friendly & nice atmosphere. we walked in & luckily there was a reserved table hold later so we could squeeze in. people were happy & enjoying their meal very much
We had a pizza, gnocchi and fresh garlic focaccia. All super tasty, especially the focaccia dipped in the gnocchi sauce. The gnocchi was really light and soft but the sauce was a little rich and overwhelming. My partner had the pizza and he loved it, however he wasn’t sure if he’d rate it the best pizza in Melbourne. The menu was huge so we’d definitely be happy to come back and try more!
Got the margherita and the Di Parma, both were tasty but expensive. These were the thin crust italian style pizza's, so were not heavy on the toppings. So despite being large, needed a few more slices than normal to get myself full. leaving a 4* as i'd visit again if i'm feeling the need for some fancy pizza.
The best pizza I had in Melbourne so far ! Lovely staffs and warm atmosphere here ! So nice to catch up with friends, we had Di Parma and 48h signature pizzas here, highly recommended book in advance especially weekends
