Four Pillars is a small gin distillery in Healesville, Yarra Valley. Proudly established in 2013, we're flying the flag for Aussie gin around the world.

Story

Four Pillars was created by three mates and one extraordinary still (Cam, Matt, Stu and Wilma). Our first release was a Rare Dry Gin which has gone on to win medals around the world.

We've since launched some pretty extraordinary other gins, including a Barrel Aged Gin and a Navy Strength Gin. You can buy direct from us at www.fourpillarsgin.com.au or from a growing list of great bottle shops and retailers. Oh and we're available in a few markets around the world...Hong Kong, New Zealand, Republic of Ireland, Singapore, and the UK...with more to come.

In terms of our ambition for our first gin, we didn't want a London Dry Gin but we couldn't ignore juniper. The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture.

The tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel.

Perhaps most interesting is our use of whole oranges. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise.

Ultimately it’s about trying to deliver the best of both worlds…a perfect, classic gin and something that would fascinate and delight even the most hardened gin fanatic…spicy but with great citrus, a truly modern Australian gin.

Mission

At Four Pillars we want to celebrate the craft of distilling and elevate the craft of cocktail making in Australia. We believe people should drink better, not more.

Everything we make is crafted on four pillars: our magnificent Carl copper pot stills (named Wilma, Jude and Eileen); the best water in the world from our home in the Yarra; an equal mix of great local and exotic botanicals; and, a commitment to craft and attention to detail every step of the way.

We’ve been to four pillars back in the early days, during their renovation and today. Great gin, my fav is the bloody Shiraz gin, and for lunch they have an expanded menu now. Today we had their grazing board which included some gin infused bites such as the salmon and duck pate. A great combo with their gin paddle. Highly recommend you check this place out for lunch in Healesville, the distillery looks amazing.
Staff were very friendly and knowledgeable. We really enjoyed the tasting plate. Thank you for letting us try the Christmas gin as well. It made our day. We’ll definitely come back and recommend to everyone.
Was here before the massive renovations. What a delightful space! Had a couple of snacks and cocktails, all very good. Friendly service. Walked away with some bottles $10 off/bottle and gin-infused caviar. Perfect weekend experience in the Yarra.

The work the staff put in to making the tasting fun and informative is worth much more than the $15 price of the gin paddle. Great crew!nnGin sour was gooood. The restaurant at The Four Pillars gin distillery provides a remarkable culinary experience, perfectly complemented by a gin tasting.nAmong the standout dishes, the chicken, leek, and tarragon pie was a true delight, as were the confit duck arancini and gin-cured salmon bagel. The ham, cheese, and chili jaffle was also a pleasant surprise.nThe service was both professional and friendly, adding to the welcoming and warm atmosphere of the place.nOverall, it's a gastronomic experience not to be missed for gin enthusiasts and lovers of inventive cuisine.
