First off, I LOVED this hotel and always looked forward to our visits to Sydney and stays at The Establishment. Unfortunately, the hotel had deteriorated so much that we had to check out after one night. This place is filthy and run down. This is far from a 5-star hotel. The lovely breakfast in the atrium...GONE, replaced with room service with four options on the menu so you can eat in your filthy room or a dingy, dark bar off the lobby with gnats flying around. Yuck. The carpet is stained, the furniture is worn, and every part of the hotel looks dirty. The walls are paper thin, so you hear everything from outside noise to the elevator shaft and anyone walking on your floor. The noise has always been an issue, but we looked past it because it was such a fun and unique hotel. Shame on Merivale for allowing this wonderful hotel to deteriorate to such a dismal state. On a positive note, Brittney at the front desk was fantastic.
Kicked out on Thu Mar 30th for no reason: first myself, then a colleague, then another colleague. Just five men us and client between the ages of 35-50 having a civilized after-dinner drink on ground level. Needless to say, we won’t be giving them any more business.Rooms: 1/5
Accommodation is not recommended. Very loud from garbage trucks and people screaming through the streets all night, impossible to get any rest. It was also a week night. The room was dirty, stains everywhere, very dark and the mini bar obviously not sorted through as there was an open bottle of soft drink in the fridge. Also extremely loud noise from the plumbing in the room above, it would bang every time the person used a tap, and pipe noises the whole time the shower was being used, absolutely impossible to sleep with that sort of noise. The next morning, the cleaners in the next room were extremely loud. Door banging and complete disregard for the guests staying in adjoining room. Overall building is very outdated, lifts dirty and noisy. The only nice element was the foyer area but that's where it stopped. I cannot comment on the restaurant, as I didn't dine there.

Great little hotel, which has stood the test of time. Conveniently located qith great venues nearby. Bathroom a stand out. Reasonably priced for SydneyRooms: 4/5
Good size rooms but bathroom roof above shower had some black spots that could be mould. A little noisywith bars below and i was on 3rd floor.Rooms: 4/5
I like the place, however the salsa night are not longer salsa nights, they mix a lot of other Latin genders but not as much salsa as they used to do it.
I would give this hotel zero stars if I could. This hotel has absolutely terrible noise proofing. I have stayed in quieter hotels in the middle of Seminyak in Bali!! My partner and I were both kept wide awake the entire night by people in the street below coming out of pubs as well as every car and truck passing by as well as the noise coming in from the rooms next door and people in the hallway it was so loud it echoed through the room. We played white noise through an iPad which still couldn’t drown it out. I finally fell asleep at 6am, thinking I might be able to sleep for a few hours before work, before we were woken up by cleaners vacuuming next door at 7am. It echoed right through our room it was so loud. We were staying here for business to get a good nights sleep to make it easier to be in the city the next day. Well that didn’t work out because I was so sleep deprived that I took the next day off work. Not only the noise issue, the bed was not what I would expect from a “5 star hotel”. The mattress was lumpy and uncomfortable and the sheets and pillows were rough and scratchy they made my skin itch. In case it couldn’t get any worse, the room was hot and stuffy, despite it being cold outside. We had the aircon set on cold to 16 degrees and fan on high, but could hardly feel a draft in the room. We slept with the covers off and still were sweating. The bathroom was gross, there was visible black mould growing between the tiles and the bath was so small even for just 1 adult. I can’t believe we paid $400 just to be sleep deprived in a dirty room. I’ve never had such a terrible nights sleep in a hotel and I’m absolutely shocked it can be classed at 5 star. I would never ever recommend this hotel to anyone it was awful and overpriced.
Had a modern pub feel. So many spaces that allowed you to find your own space. The steak was cooked to perfection and the 2 salads were a great addition. It was a pub meal with much more than deep fried options.
We cancelled our booking at Fullerton to try The Establishment, but it was big mistake! The hotel was nicely decorated but poorly maintained, stains everywhere. It was more like a hotel for a romantic layover than a hotel for serious business people. The machine in the gym won't work, and we could only have breakfast in the room they said due to covid.
