Story

At Banneton, our philosophy is grounded in the belief that as a food staple, our breads must be naturally delicious, wholesome and made without the use of artificial improvers or additives. With this in mind, we prepare our doughs gently, using only natural ingredients and time-honoured traditional methods to build flavour and texture without damaging the delicate structure of the dough.

The breads are then baked in our custom-made “wood-fired” oven, which bestows the unique aroma & wonderfully textured crust that only traditionally baked breads can offer, with a few exceptions that derive greater benefit by being baked on stones in our “John Willet” oven.

Our range encompasses thoughtfully balanced Sourdoughs, traditional French Baguettes Italian Ciabatta, Focaccia, Olive with fresh Rosemary, Latvian Rye and more.

When collecting a loaf why not relax in BANNETON’S new cafes, located in WOOLLOONGABBA (two doors down from Pennisi Cuisine), NEW FARM or in ASHGROVE. Indulge in our delicious range of pastries, savouries, gourmet sandwiches and excellent coffee.

Banneton Sourdough is very good and it toasts up very well. Update: Got a beef and Guinness pie and it had way too much little potato cubes in it and fell apart halfway into eating. It was ok but not $8 great.

Great bakery with lots of pastries. Coffee is good and the food is great! There is a space to sit outside but inside is quite tight. The Pork and Fennel roll is amazing!

One of our family MUST go places. We love their bread. Great quality and price. I am a big fan of their Latvian Rye bread that they bake only on weekends when the male part of my family loves their Ciabatta and Sourdough.

Baking standards are declining. There is no quality control. I am talking in particular about the apple pastry. The apple was the only edible part. Pastry was supposed to be puff but did not rise and was hard as rock.
Good bread and sourdough; unfortunately they don't offer in-house slicing of bread.
I could tell this bakery was going to be good people were lined up before it even opened including me if your after great tasting bread you can't go wrong here.
