The shop itself is a quaint premises on Selwyn Street, not far from the central city, and has been operating as a butcher’s shop since 1906. The white frontage boasts the classic red-and-white striped awning, and appears much as it would have for the last century.
In June 2013, Lisa, a 23 year-old German bought the business. Lisa, who arrived in New Zealand from Frankfurt at 19, has been in the butchery trade for seven years, a craft she learnt from her grandfather as a girl. Sick of being pigeonholed as a sausage-maker, she wanted to prove her worth as a general butcher, so decided to take on the challenge of a traditional butchery which involves both abattoir and home-kill processing, where hand-selected Canterbury animals arrive as whole carcasses to be butchered, and small goods, bacons and hams are still made on the premises.
