GENUINE HANCRAFTED ITALIAN FOOD Fond and joyful memories of the rustic and genuine dishes prepared by Giorgio’s grandmother and mother are the inspiration of our hand crafted pasta and our other signature dishes. Dining at Pompei’s transplants the Venetian backdrop of Giorgio’s childhood into the eclectic surrounds of Bondi Beach. In the main dining room, the cool fresh colours of the shimmering tiles connect with the world famous marine landscape, whilst the adjoining timber paneled dining room evoke the old world cosy “stube” rooms of Cortina. And for the real Bondi experience, an extensive street side al fresco area allows you to watch Bondi live!
CRISP THIN BASE MASTERFULLY LEAVENED PIZZA MADE WITH SUPREME ATTENTION TO SLOW FERMENTATION Our pizza is made with stone-ground unbleached flour, organic extra virgin olive oil, sea salt, natural yeast and filtered water. We rest our dough for a minimum of 48 hours in true artisan tradition to create an exceptionally light, fragrant, crisp, and nutritious pizza. We use certified San Marzano tomatoes, fresh fior di latte mozzarella, and other genuine ingredients meticulously selected for their authenticity. With the same great care and respect we now make our own GLUTEN FREE pizza base with wholegrain rice flour, millet, sorghum and potato flour.

Respecting tradition yet embracing research and innovation, Giorgio recreates the emotions of times past with our stunning seasonal selection of our all natural gelato and sorbetto. A CELEBRATION OF EXCEPTIONAL RAW INGREDIENTS Biodynamic fresh milk and yoghurt, pure jersey cream, Snowy Mountains spring water, Grand Cru chocolate, Bronte pistachios, Tondo Gentile hazelnuts, Arabica coffee, rich house made caramel, fresh seasonal fruit- often organic, showcasing what’s best at the markets. In summer, fresh fig, white peach, nectarine, mango and other summery delights. In winter, blood orange, mandarin and Meyer lemon. In autumn, Granny Smith apple, pear, chestnut, quince and persimmon.
