Clayton Wallwork is a long time home brewer and is passionate craft beer drinker, who has been running his own forestry consultancy business for the last 8 years. Brad Wallwork (Clayton’s brother) is the creative one, who has been working in graphic design and marketing for the last 15 years. Amanda Wallwork (Clayton’s wife) is a registered psychologist and will provide valuable insights into the psyche of the craft beer drinker – naah just kidding, Amanda just tells Clayton to stop being a dick when it’s needed.
We are developing our recipes using predominantly New Zealand ingredients: hops from Nelson, malt from Canterbury, and Christchurch artesian water. The yeast is from Europe and US, but you can’t get around that. The beer we are starting with is:
Pale Ale - with lovely fruity hop aroma, and a balanced malt presence. We have also released an Oatmeal Stout - full of coffee, chocolate, roasted flavours with a nice silky finish.
Other beers produced include a Kolsch, Porter, Red Rye IPA, and a Californian Common.
