Authentic Brazilian Barbecue restaurant known as 'Churrascaria'
The Churrasco tradition has its roots in the southern parts of Brazil, to be more accurate the "Pampas" the coldest regions of south Brazil.
The inhabitants of those lands, the Gauchos, used to practice the activity of churrasco to cook their meals. Hunting and gathering around the open fire blaze to warm themselves up and also roast their meal, calling it a Churrasco.
Nowadays an Authentic Brazilian Churrascaria is set up to use the "Rodizio" service.
The Rodizio method consists on having a waiter bringing to your table a round of different types of meat. These meats are cooked on long skewers over charcoal blaze, which you can also watch happening in the kitchen's rotisserie.
It is important to mention that the cuts of meat provided are different from the types of cuts you get in Australia. These are South American style cuts, created to extract the tenderest and flavoursome parts. A good example is the famous "Picanha" which is the top, most tender and smallest part of the rump, which is simply delicious.
It is also important to remember that you can ask for the Rodizio to stop coming to your table by switching a marker on your table to red. If you keep it green the meat won't stop coming the whole night. But hey, we understand it would be easy to forget to put it to red!
Your waiter will usually first bring a number of traditional Brazilian accompaniments to your table of which are also included in the Authentic Brazilian Barbecue experience.
