About Welcome to Ciao Cielo Italian Restaurant Story A RELATIVE newcomer to Port Melbourne’s Bay Street strip is Ciao Cielo (it translates as ‘‘Hello Sky’’), a neat 35-seater co-owned by Bryan Nelson, a former head chef at the esteemed A la Grecque in Aireys Inlet for three years. Nelson has also worked under Paul Raynor at the Stokehouse and Ryan Clift at Walters Wine Bar. The food is ‘‘unpretentious modern Italian’’, says co-owner Kate Dickins, a chef by training who runs front of house and takes charge of desserts.
