The recipes for our cheeses originate from the beautiful land of Puglia, Italy.
Puglia, the region of Italy in the south east can boast of being the home of cow's milk Mozzarella (just as Campania is the home of buffalo mozzarella).
The wide availability of vegetables, fruits and fresh fish, have shaped the region's culinary traditions. Its recipes contribute largely to the popular "Mediterranean diet" based on the use of vegetables, often raw, extra virgin olive oil, wheat bread, fish and dairy products.
Puglia is a region of Italy with the highest percentage of low lying country and the region of the peninsula with the longest coastline. Its symbol is the olive tree, which dominates the landscape from North to South.
